Boil the Eggs

Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat, then cover and remove from heat. Let them sit for 12 minutes.

Cool the Eggs

Transfer the eggs to an ice bath for about 5 minutes to cool them down quickly.

Peel the Eggs

Once cooled, gently tap the eggs on a hard surface and peel them under running water for easier shell removal.

Prepare the Filling

Cut the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, pickled mustard seeds, nduja, salt, and black pepper. Mash together until smooth.

Fill the Egg Whites

Spoon or pipe the yolk mixture back into the egg whites.

Garnish

Sprinkle chopped chives on top of the filled eggs for garnish.
