Prepare the Quinoa

Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water or vegetable broth to a boil. Add quinoa and salt. Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes.

Season the Branzino

Preheat the oven to 400°F (200°C). Place the cleaned branzino on a baking sheet. Drizzle with olive oil, sprinkle with salt and black pepper. Stuff the cavity with diced preserved lemon and some chopped parsley.

Bake the Branzino

Bake the branzino in the preheated oven for about 20-25 minutes or until the fish is cooked through and flakes easily with a fork.

Serve

Serve the baked branzino alongside the fluffy quinoa and a generous spoonful of salsa verde. Garnish with additional chopped parsley if desired.
