    Prepare the Dates

    In a bowl, combine the chopped dates and boiling water. Let it sit for about 15 minutes until the dates have softened.

    Make the Batter

    In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

    Combine Dry Ingredients

    In another bowl, whisk together the flour, baking powder, and salt.

    Combine Mixtures

    Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Begin and end with the dry ingredients, mixing until just combined.

    Bake

    Preheat your oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes, or until a skewer inserted in the center comes out clean.

    Prepare Toffee Sauce

    While the pudding is baking, prepare the toffee sauce by combining 100g of brown sugar, 100g of unsalted butter, and 200ml of heavy cream in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is smooth.

    Once the pudding is baked, allow it to cool slightly. Pour warm toffee sauce over the pudding and serve with a scoop of vanilla ice cream.
