Preparation and Cooking

    Prepare the Fries

    Peel the russet potatoes and cut them into thin strips. Rinse the fries in cold water to remove excess starch, then dry thoroughly with paper towels.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 325°F (163°C). Fry the potatoes in batches until golden brown and crisp, about 5-7 minutes. Remove and drain on paper towels. Season with salt while hot.

    Prepare the Garlic Herb Butter

    In a small bowl, mix together the unsalted butter, minced garlic, chopped parsley, and thyme. Set aside.

    Cook the Steak

    Season the ribeye steaks generously with salt and black pepper on both sides. Preheat a grill or skillet over high heat. Add a little vegetable oil and sear the steaks for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Rest the Steak

    Remove the steaks from the heat and let them rest for 5 minutes before slicing.

    Serve

    Slice the steak against the grain and serve alongside the fries. Top the steak with garlic herb butter.
