Prepare the Tartar Sauce
In a bowl, mix together mayonnaise, dill pickle, lemon juice, and capers. Season with salt and pepper to taste. Chill in the refrigerator while you prepare the fish and chips.

Prepare the Fries
Peel and cut the potatoes into fry shapes. Rinse them in cold water and pat dry with a towel. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, season with salt.

Make the Beer Batter
In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add beer, whisking until smooth. The batter should be thick enough to coat the fish.

Fry the Fish
Dip each fish fillet into the beer batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Serve
Serve the crispy battered fish alongside the fries and chilled tartar sauce.
