    Melt the Chocolate

    In a heatproof bowl, melt the semi-sweet chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Add vanilla extract and continue to whip until stiff peaks form. Set aside.

    Beat Egg Whites

    In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.

    Combine Mixtures

    Gently fold the melted chocolate into the whipped cream until well combined. Then, fold in the beaten egg whites in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

    Top with whipped cream before serving and enjoy your rich chocolate mousse.
