    Prepare the Potatoes

    Peel and chop the potatoes into even-sized chunks. Place in a pot of salted water and bring to a boil. Cook for about 15-20 minutes until tender.

    Cook the Sausages

    In a large frying pan, heat the olive oil over medium heat. Add the pork sausages and cook for about 10-12 minutes, turning occasionally, until browned and cooked through.

    Make the Onion Gravy

    In the same pan used for the sausages, add the sliced onion and cook until softened. Stir in the flour and cook for 1-2 minutes. Gradually add the beef stock, stirring constantly until the gravy thickens. Season with salt and pepper.

    Mash the Potatoes

    Once the potatoes are cooked, drain and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and pepper to taste.

    Spoon the mashed potatoes onto plates, top with sausages, and drizzle with onion gravy. Enjoy!
