Pasta Preparation
- 1
Make the Pasta Dough
In a large bowl, combine the flour and salt. Make a well in the center, add the eggs, and mix until a dough forms. Knead for about 5-10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.
- 2
Roll the Pasta
After resting, roll out the dough using a pasta machine or a rolling pin to your desired thickness. Cut into tagliatelle strips.
Bolognese Sauce
- 3
Cook the Meat
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until soft. Add ground beef, cook until browned.
- 4
Add Tomatoes and Seasonings
Stir in crushed tomatoes, Italian seasoning, salt, and black pepper. Simmer for 30 minutes, stirring occasionally.
Salad Preparation
- 5
Prepare the Salad
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Toss with dressing of choice.
Vanilla Budino
- 6
Make the Budino
In a saucepan, whisk together milk, sugar, cornstarch, vanilla extract, and salt. Cook over medium heat until thickened, then pour into serving cups and chill.
Salted Caramel
- 7
Prepare the Caramel
In a saucepan, melt sugar over medium heat until it turns amber. Stir in butter until melted, then add heavy cream and sea salt. Stir until smooth.
Final Assembly
- 8
Assemble the Meal
Cook the tagliatelle in salted boiling water for 3-4 minutes until al dente. Serve with bolognese sauce on top, alongside salad and bread. Top the budino with warm salted caramel before serving.
