Marinated Olives

1. Prepare the Marinade

In a bowl, combine mixed olives, olive oil, rosemary, smashed garlic, red pepper flakes, and lemon zest. Toss to coat the olives evenly.

2. Marinate

Cover the bowl with plastic wrap or transfer to a jar. Let marinate in the refrigerator for at least 2 hours, preferably overnight.

Pickled Vegetables

3. Prepare the Brine

In a saucepan, combine white vinegar, water, sugar, salt, and dill. Bring to a boil, stirring occasionally until sugar and salt dissolve.

4. Pickle the Vegetables

In a jar, layer the sliced carrots, cucumber, and radishes. Pour the hot brine over the vegetables, ensuring they are fully submerged. Let cool, then refrigerate for at least 24 hours before serving.

Cannellini Hummus

5. Blend Ingredients

In a food processor, combine cannellini beans, tahini, minced garlic, lemon juice, olive oil, and salt. Blend until smooth.

6. Adjust Consistency

Add water a tablespoon at a time until the desired consistency is reached. Taste and adjust seasoning if necessary.

7. Serve

Transfer the hummus to a serving bowl and drizzle with olive oil. Serve with marinated olives and pickled vegetables.
