    Prepare the Filling

    Choose either shredded chicken, ground beef, or grilled veggies as your filling. If using chicken or beef, cook and shred or brown them in a skillet over medium heat. If using veggies, grill or sauté them until tender.

    Warm the Tortillas

    Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until warm and pliable.

Assembling the Enchiladas

    Fill the Tortillas

    Take one warm tortilla and place 1/3 cup of the chosen filling in the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat with the remaining tortillas and filling.

    Add the Sauce

    Pour the green enchilada sauce evenly over the assembled enchiladas in the baking dish, ensuring they are well covered.

Baking

    Bake the Enchiladas

    Preheat your oven to 350°F (175°C). Sprinkle the shredded cheese over the top of the enchiladas. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.

    Plate and Serve

    Serve the enchiladas hot, garnished with chopped cilantro and a dollop of sour cream on top. Serve alongside cooked rice and black beans.
