Burrito Filling

Method

Prepare the Filling

  1. 1

    Cook the Rice

In a medium saucepan, cook 1 cup of rice according to package instructions. Once cooked, set aside.

  2. 2

    Prepare Black Beans

Rinse and drain the 1 cup of black beans. Set aside.

  3. 3

    Caramelize the Onions

Slice 1 medium onion and sauté in a pan over medium heat with a little oil until caramelized, about 10-15 minutes. Set aside.

  4. 4

    Prepare Jalapeños

Slice 2 whole jalapeños and remove seeds if less heat is desired. Set aside.

  5. 5

    Cook the Chorizo

In a skillet over medium heat, cook 1 cup of chorizo until browned and cooked through, about 5-7 minutes. Drain excess fat and set aside.

  6. 6

    Prepare Carnitas

If using pre-cooked carnitas, shred 1 cup of carnitas. If cooking from scratch, slow cook pork shoulder with spices until tender.

Assemble the Burrito

  1. 7

    Warm the Tortillas

Gently warm 4 large flour tortillas in a dry skillet or microwave until pliable.

  2. 8

    Layer the Ingredients

On each tortilla, layer 1/4 cup rice, 1/4 cup black beans, caramelized onions, jalapeños, chorizo, carnitas, 1/4 cup cheese, and 1/4 cup sour cream.

  3. 9

    Wrap the Burrito

Fold the sides of the tortilla over the filling and roll from the bottom to the top, ensuring the filling is secured inside.

Serve the Burrito

  1. 10

    Top with Sauces

Place the wrapped burritos on a serving plate and generously pour 1/4 cup of medium-spicy red sauce and 1/4 cup of cheese dip over each burrito.

  2. 11

    Garnish and Serve

Optionally, garnish with chopped cilantro or extra jalapeños. Serve immediately and enjoy!
