Preparing the Birria

Prepare the Meat
Cut the chuck roast and lamb shank into large chunks and season with salt and pepper.

Soak the Chiles
Remove the stems and seeds from the guajillo and ancho chiles. Soak them in hot water for about 15 minutes until soft.

Cook the Meat
In a large pot, add the meat chunks, blended sauce, bay leaves, and beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours until the meat is tender.

Prepare the Tortillas
Heat the blue corn tortillas in a dry skillet over medium heat until warm and pliable.

Fill the Tacos
Place a generous amount of shredded birria meat in the center of each tortilla.

Serve the tacos with a side of the reserved birria broth and salsa of your choice.
