For the Sweet & Spicy Salmon

    Prepare Marinade

    In a bowl, whisk together honey, soy sauce, Sriracha sauce, minced garlic, grated ginger, lime juice, salt, and black pepper until well combined.

    Marinate Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over the salmon. Cover and refrigerate for at least 30 minutes.

    Grill Salmon

    Preheat the grill to medium-high heat. Remove the salmon from the marinade and grill for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

For the Vegetable Chipotle Fried Rice

    Sauté Vegetables

    In a large skillet or wok, heat vegetable oil over medium heat. Add minced garlic and chopped onion, sauté until the onion is translucent.

    Add Remaining Vegetables

    Stir in zucchini, squash, carrots, red and green bell peppers, and cook for an additional 5-7 minutes until slightly tender.

    Add Rice and Seasonings

    Add cooked rice, minced chipotle pepper, soy sauce, salt, and black pepper. Stir-fry for another 5 minutes, mixing well to incorporate flavors.

    Finish with Green Onions

    Remove from heat and stir in chopped green onions. Set aside.

For the Vegetables

    Sauté Spinach and Broccoli

    In a separate pan, heat olive oil over medium heat. Add fresh spinach and broccoli florets, season with salt and black pepper, and sauté until the spinach is wilted and the broccoli is tender, about 5 minutes.

    Add Pineapple

    Stir in the diced pineapple and cook for another 2 minutes until heated through. Remove from heat.
