Steak and Shrimp Preparation

    Marinate the Steak and Shrimp

    In a bowl, combine olive oil, minced garlic, lime juice, cumin, paprika, salt, and black pepper to create a marinade. Add the rib eye steak and shrimp, ensuring they are coated well. Cover and let marinate for at least 30 minutes.

    Grill the Steak and Shrimp

    Preheat your grill to medium-high heat. Grill the rib eye steak for about 5-7 minutes on each side for medium-rare, depending on thickness. Grill the shrimp for 2-3 minutes on each side until they are pink and opaque. Remove from grill and let rest.

Rice Preparation

    Cook the Rice

    In a medium saucepan, combine long grain rice, water, and salt. Bring to a boil, then reduce to low heat, cover, and simmer for 15-20 minutes or until the rice is tender and water is absorbed. Fluff with a fork before serving.

Guacamole Preparation

    Make the Guacamole

    In a bowl, mash the ripe avocados with lime juice and salt. Stir in the diced tomato, chopped cilantro, and diced onion until well combined. Adjust seasoning to taste.

    Prepare the Tortilla Dough

    In a large mixing bowl, combine blue corn masa flour and salt. Gradually add water, mixing until a dough forms. Knead the dough for a few minutes until smooth.

    Cook the Tortillas

    Divide the dough into small balls (about the size of a golf ball). Flatten each ball between two pieces of plastic wrap using a tortilla press or a rolling pin. Heat a skillet over medium heat and cook each tortilla for about 1-2 minutes on each side until lightly browned and cooked through.
