Marinade and Shrimp

Vegetables

Method

Marinating the Shrimp

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper.

  2. 2

    Marinate the Shrimp

Add the shrimp to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Slice the Vegetables

While the shrimp is marinating, slice the bell peppers and onion into thin strips.

Grilling the Shrimp and Vegetables

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 5

    Grill the Shrimp

Remove the shrimp from the marinade and thread them onto skewers. Grill the shrimp for about 2-3 minutes on each side, or until they are opaque and cooked through.

  3. 6

    Grill the Vegetables

In a grill basket or directly on the grill, add the sliced bell peppers and onion. Grill for about 5-7 minutes until they are tender and slightly charred.

Assembling the Fajitas

  1. 7

    Prepare the Tortillas

Warm the tortillas on the grill for about 30 seconds on each side.

  2. 8

    Assemble the Fajitas

On each tortilla, add a portion of grilled shrimp, grilled vegetables, and sprinkle with queso fresco. Top with lettuce and a dollop of sour cream.

Serving

  1. 9

    Serve the Dish

Serve the fajitas with a side of cooked rice and black refried beans.
