Shrimp Filling Preparation

Season and Grill
Add shrimp, cumin, chili powder, salt, and black pepper. Cook for 3-5 minutes, stirring frequently, until shrimp are cooked through. Remove from heat.

Prepare the Tortillas
Warm corn tortillas in a dry skillet for about 30 seconds on each side until pliable. Set aside.

Add Tomato Sauce and Spices
Stir in garlic, tomato sauce, cumin, chili powder, and salt. Simmer for 10 minutes, stirring occasionally.
Assembly and Serving

Assemble the Enchiladas
Spoon a portion of the shrimp filling onto each tortilla, roll them up tightly, and place seam-side down in a baking dish.

Top with Sauce and Cheese
Pour the red sauce over the assembled enchiladas and sprinkle with shredded cheese.

Bake the Enchiladas
Preheat oven to 350°F (175°C). Bake for 20 minutes until cheese is melted and bubbly.

Serve the enchiladas hot with cooked rice, shredded lettuce, and sour cream on the side.
