Seafood Marinade

Method

Marinating the Seafood

    Prepare the Marinade

    In a large bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, chili powder, salt, and black pepper.

    Marinate the Seafood

    Add the shrimp and scallops to the marinade. Make sure they are well coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

    Slice the Vegetables

    While the seafood is marinating, slice the bell peppers and onion into thin strips.

Cooking the Seafood and Vegetables

    Grill the Seafood

    Preheat a grill or grill pan over medium-high heat. Remove the seafood from the marinade and grill for about 2-3 minutes on each side or until fully cooked.

    Sauté the Vegetables

    In a separate pan, sauté the sliced bell peppers and onion over medium heat until they are tender, about 5-7 minutes.

Assembling the Fajitas

    In a serving platter, layer the grilled seafood, sautéed vegetables, and top with crumbled queso fresco.

    Serve the seafood fajitas with cooked rice, black refried beans, shredded lettuce topped with sour cream, and warm tortillas.
