    Prepare the Ingredients

    Dice the garlic and chop the fresh cilantro. If using chorizo, grill bell peppers and onions until slightly charred and tender. If using spinach, sauté it in a pan until wilted.

Cooking

    Cook the Chorizo

    In a skillet over medium heat, add olive oil. Once hot, add the chorizo and cook until browned and fully cooked, about 5-7 minutes. Remove from skillet and drain excess fat.

    Melt the Cheeses

    In a medium saucepan, combine the Monterey Jack cheese, Cotija cheese, heavy cream, and diced garlic. Heat over low-medium heat, stirring continuously until the cheeses are melted and the mixture is smooth.

    Combine Ingredients

    Once the cheese mixture is melted, add the cooked chorizo (or grilled veggies, if preferred) to the saucepan and mix well. Stir in the chopped cilantro.

    Serve

    Transfer the queso fundido to a serving bowl. Serve hot with tortilla chips and sliced jalapeños on the side.
