Preparing the Chilies
Remove the stems and seeds from the guajillo and ancho chilies. Place them in a bowl and cover with hot water. Let them soak for about 15 minutes until softened.

Making the Marinade
In a blender, combine the softened chilies, garlic cloves, cumin powder, oregano, apple cider vinegar, olive oil, salt, and black pepper. Blend until smooth.

In a bowl, combine the shrimp and the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Warm the corn tortillas on the grill for about 30 seconds on each side.

In each tortilla, add a portion of grilled shrimp, some grilled pineapple, a sprinkle of red onion, and cilantro. Drizzle with sour cream and a squeeze of lime juice.
