Marinade Preparation

    Preparing the Chilies

    Remove the stems and seeds from the guajillo and ancho chilies. Place them in a bowl and cover with hot water. Let them soak for about 15 minutes until softened.

    Making the Marinade

    In a blender, combine the softened chilies, garlic cloves, cumin powder, oregano, apple cider vinegar, olive oil, salt, and black pepper. Blend until smooth.

    Marinating the Shrimp

    In a bowl, combine the shrimp and the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Grilling

    Grilling the Pineapple

    Preheat your grill to medium heat. Cut the pineapple into rings and grill for about 3-4 minutes on each side until caramelized and tender. Remove from the grill and chop into small pieces.

    Grilling the Shrimp

    On the same grill, add the marinated shrimp. Grill for about 2-3 minutes on each side until they turn pink and opaque. Remove from the grill.

Assembling the Tacos

    Preparing the Tacos

    Warm the corn tortillas on the grill for about 30 seconds on each side.

    Building the Tacos

    In each tortilla, add a portion of grilled shrimp, some grilled pineapple, a sprinkle of red onion, and cilantro. Drizzle with sour cream and a squeeze of lime juice.

    Serve the tacos immediately with extra lime wedges on the side.
