Preparing the Wings

Marinate the Wings
In a large bowl, combine the chicken wings with olive oil, salt, and black pepper. Toss until the wings are well coated. Cover and refrigerate for at least 30 minutes to marinate.

Grill the Wings
Place the marinated wings on the grill and cook for 20-25 minutes, turning every 5-7 minutes until they are cooked through and have a nice char.
Making the Spicy Sauce

Prepare the Vegetables
While the wings are grilling, char the serrano peppers, tomatoes, and garlic cloves on the grill until they are slightly blackened and fragrant, about 8-10 minutes. Remove from the grill and let cool.

Blend the Sauce
In a blender, add the charred serrano peppers, tomatoes, garlic, lime juice, honey, cumin, paprika, salt, and black pepper. Blend until smooth and adjust seasoning to taste.
Combining the Wings and Sauce

Toss the Wings
Once the wings are cooked, place them in a large bowl and pour the spicy sauce over them. Toss until the wings are well coated in the sauce.

Serve
Plate the wings and serve immediately, garnished with lime wedges and fresh cilantro if desired.
