Prepare the Fish

Season the Haddock
In a mixing bowl, combine the olive oil, salt, black pepper, paprika, garlic powder, and lime juice. Add the haddock fillets and coat them evenly with the seasoning mixture. Let sit for 15 minutes to marinate.

Cook the Fish
You can choose to grill or fry the fish. To grill, preheat the grill to medium-high heat. Cook the marinated haddock for about 3-4 minutes per side, or until cooked through and flaky. To fry, heat a skillet over medium heat with a tablespoon of olive oil. Fry the haddock for about 4-5 minutes on each side until golden brown and cooked through.

Warm the Tortillas
While the fish is cooking, warm the blue corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are pliable.

Build the Tacos
Place a piece of grilled or fried haddock in the center of each tortilla. Top with a generous amount of shredded cabbage, a drizzle of chipotle mayo, and fresh cilantro.

Serve the tacos with lime wedges on the side for squeezing over the top before enjoying.
