Quesadilla Preparation

    Grill the Vegetables

    In a skillet over medium heat, add olive oil. Once hot, add the sliced bell peppers, zucchini, and red onion. Season with salt and black pepper. Grill for about 5-7 minutes until the vegetables are tender and slightly charred. Remove from heat and set aside.

    Assemble the Quesadilla

    On one half of each flour tortilla, sprinkle a layer of shredded cheese, followed by a portion of the grilled vegetables. Top with more cheese and fold the tortilla over to create a half-moon shape.

    Cook the Quesadilla

    In the same skillet, add the folded quesadilla and cook for 3-4 minutes on each side until golden brown and the cheese has melted. Remove from the skillet and let cool slightly before slicing.

Salsa Ranchera Preparation

    Prepare the Salsa

    In a mixing bowl, combine chopped tomatoes, onion, jalapeño, minced garlic, and cilantro. Add lime juice and salt. Mix well and let it sit for at least 10 minutes for the flavors to meld.

Final Assembly

    Place the sliced quesadilla on a serving plate. Serve with a side of cooked rice, shredded lettuce, sour cream, and homemade salsa ranchera. Enjoy!
