Marinating the Veggies

Slice the Vegetables
Cut zucchini and yellow squash into strips, and slice the bell peppers and red onion into thick strips.

Marinate the Vegetables
Add the sliced vegetables to the marinade, ensuring they are well coated. Cover and let marinate for at least 30 minutes in the refrigerator.
Grilling the Veggies

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Vegetables
Remove the marinated vegetables from the refrigerator and place them on the grill. Grill for about 5-7 minutes on each side or until tender and slightly charred.

Once grilled, remove the vegetables from the grill and sprinkle with queso fresco before serving.

While the veggies are marinating, cook the rice according to package instructions. Heat the black refried beans in a saucepan over medium heat until warmed through.
