Quesadilla Preparation

    Prepare the Chicken

    Start by seasoning the chicken breasts with salt, black pepper, cumin, and garlic powder. Heat olive oil in a grill pan over medium-high heat.

    Grill the Chicken

    Add the seasoned chicken breasts to the grill pan. Cook for 6-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. Remove from heat and let it rest for a few minutes before slicing it into strips.

    Assemble the Quesadilla

    On one half of a flour tortilla, place a handful of shredded cheese, then add sliced grilled chicken on top. Fold the tortilla in half to cover the filling.

    Cook the Quesadilla

    In the same grill pan, place the folded quesadilla and cook for about 3-4 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat for the remaining tortillas.

Salsa Ranchera Preparation

    Prepare the Salsa Ingredients

    Chop the tomatoes, onion, and jalapeño pepper. Add them to a mixing bowl.

    Mix Salsa Ranchera

    Add chopped cilantro, lime juice, and salt to the bowl. Mix everything together until well combined. Adjust seasoning to taste.

Serving

    Plate the Dish

    On a serving plate, place the grilled chicken quesadilla. Serve with a side of cooked rice, lettuce, and a dollop of sour cream. Don't forget to add a generous serving of homemade salsa ranchera on top or on the side.
