Three corn tortillas filled with a blend of grilled chicken, steak and shrimps. Topped with red, green and cheese sauce. Served with rice, refried black beans, lettuce, guacamole and sour cream on the side

Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Take one corn tortilla and place a portion of the filling mixture in the center. Roll the tortilla tightly around the filling and place seam-side down in a baking dish. Repeat with the remaining tortillas.

Add Sauces and Cheese
Pour the red enchilada sauce evenly over the rolled tortillas, then drizzle the green enchilada sauce on top. Sprinkle the shredded cheese over the sauces.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Prepare the Sides
While the enchiladas are baking, prepare the sides. Heat the refried black beans in a small saucepan over medium heat until warmed through. Cook the rice if not already prepared.

Serve
Once the enchiladas are done, remove them from the oven and let them cool for a few minutes. Serve the enchiladas with a side of cooked rice, refried black beans, shredded lettuce, guacamole, and sour cream.
