Prepare Toppings
While the corn is cooking, crumble the queso fresco into a bowl. Set it aside. Prepare the Tajín seasoning in another small bowl.

Cut Limes
Slice the limes into wedges and set them aside. These will be served alongside the elotes.
Assembly

Coat Corn
Once the corn is cooked, remove it from the pot or grill and let it cool slightly. Using a brush or spoon, slather the mayonnaise generously over the corn, ensuring all sides are covered.

Add Toppings
Sprinkle the crumbled queso fresco over the mayo-coated corn, followed by a generous dusting of Tajín seasoning to taste.

Serve
Place the prepared elotes on a serving platter and offer lime wedges on the side for squeezing over the corn just before eating.
