Marinate the Haddock
In a bowl, combine the chipotle sauce, olive oil, lemon juice, salt, and black pepper. Add the haddock fillets and coat them well. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Vegetables
While the haddock is marinating, slice the bell peppers, zucchini, and red onion into thin strips. In a large skillet, heat 1 tablespoon of olive oil over medium heat, then add minced garlic. Sauté for about 30 seconds until fragrant.

Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of basmati rice and 0.5 tsp of salt. Stir once, cover, and reduce heat to low. Cook for 15-20 minutes or until the water is absorbed and the rice is fluffy. Remove from heat and let it sit, covered, for an additional 5 minutes.

Plate the Dish
On a serving plate, place a generous portion of the sautéed vegetables as the base. Lay the grilled haddock on top of the veggies. Serve the fluffy basmati rice on the side. Enjoy your Chipotle Haddock!
