Carnitas Preparation

    Season the Pork

    Rub the pork shoulder with salt, black pepper, and cumin. Let it marinate for at least 30 minutes.

    Sear the Pork

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the pork on all sides until browned (about 5-7 minutes per side).

    Add Aromatics

    Add the chopped onion and garlic cloves (whole or smashed) to the pot and sauté for about 2-3 minutes or until fragrant.

Salsa Verde Preparation

    Roast the Tomatillos and Jalapeños

    On a baking sheet, place tomatillos and jalapeños. Roast in a preheated oven at 400°F (200°C) for about 15-20 minutes until soft and slightly charred.

    Blend the Salsa Verde

    In a blender, combine roasted tomatillos, jalapeños, cilantro, and lime juice. Blend until smooth. Set aside.

Cooking the Carnitas

    Combine Ingredients

    Pour the salsa verde over the seared pork in the pot. Bring to a simmer.

    Braise the Pork

    Cover the pot and reduce the heat to low. Let it braise for about 2-3 hours until the pork is tender and easily shreds.

    Shred the Pork

    Once cooked, remove the pork from the pot and shred it with two forks. Return the shredded pork to the pot and mix with the salsa.

    Cook the Rice

    Cook rice according to package instructions. Set aside.

    Heat Refried Beans

    In a small saucepan, heat the refried black beans over medium heat until warmed through.

    Warm the Tortillas

    Warm blue corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.
