Carnitas Preparation

Season the Pork
Rub the pork shoulder with salt, black pepper, and cumin. Let it marinate for at least 30 minutes.

Add Aromatics
Add the chopped onion and garlic cloves (whole or smashed) to the pot and sauté for about 2-3 minutes or until fragrant.
Salsa Verde Preparation

Roast the Tomatillos and Jalapeños
On a baking sheet, place tomatillos and jalapeños. Roast in a preheated oven at 400°F (200°C) for about 15-20 minutes until soft and slightly charred.

Blend the Salsa Verde
In a blender, combine roasted tomatillos, jalapeños, cilantro, and lime juice. Blend until smooth. Set aside.

Cook the Rice
Cook rice according to package instructions. Set aside.

Heat Refried Beans
In a small saucepan, heat the refried black beans over medium heat until warmed through.

Warm blue corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.
