Preparing the Sauce

Soak the Dried Chiles
Remove the stems and seeds from the guajillo and ancho chiles. In a bowl, soak the chiles in hot water for about 15 minutes until softened. Drain and set aside.

Make the Sauce
In a blender, combine the soaked chiles, chopped tomato, chopped onion, and chicken broth. Blend until smooth. Pour the sauce into a saucepan and simmer for about 10 minutes over medium heat. Stir in lime juice and adjust seasoning if needed.

Sear the Shrimp
In a large skillet, heat olive oil over medium-high heat. Season the shrimp with salt and black pepper. Add the shrimp to the skillet and sear for about 2-3 minutes per side, until they are pink and opaque. Remove from the skillet and set aside.

Plate the Dish
Serve the shrimp with the fiery sauce over a bed of cooked white rice. Accompany with blue corn tortillas on the side.
