Prepare the Filling

    Sauté Seafood

    In a large skillet, heat olive oil over medium heat. Add shrimp, scallops, and haddock fish. Sauté for about 5-7 minutes until the seafood is cooked through and opaque.

    Make the Sauce

    In a blender, combine dried guajillo peppers (stemmed and seeded), minced garlic, chicken or vegetable broth, tomato sauce, salt, black pepper, cumin, and lime juice. Blend until smooth.

    Combine Ingredients

    Pour the sauce over the sautéed seafood in the skillet. Let it simmer for an additional 5 minutes, allowing the flavors to meld together.

    Mix in Rice and Beans

    Add the cooked rice and black beans to the skillet. Stir gently to combine and heat through for another 3-4 minutes.

Assemble the Burritos

    Prepare Tortillas

    Warm the large flour tortillas on a skillet or in the microwave until pliable.

    Fill the Tortillas

    On each tortilla, spread a generous spoonful of sour cream, then add a portion of the seafood filling, and top with shredded cheese.

    Roll the Burritos

    Carefully roll each tortilla tightly, folding in the sides as you go to secure the filling.

    Add Cheese Dip

    Place the rolled burritos in a baking dish. Pour cheese dip over the top and drizzle with any remaining red sauce.

    Bake

    Preheat the oven to 350°F (175°C). Bake the burritos for 15-20 minutes, until heated through and the cheese is bubbly.
