Burrito Birria Recipe

Birria Beef

Method

Prepare the Birria Beef

    Toast the Chiles

    In a dry skillet over medium heat, toast the guajillo and ancho chiles for about 2-3 minutes until fragrant. Remove from heat and let them cool slightly.

    Blend the Marinade

    In a blender, combine the toasted chiles, garlic, onion, cumin, oregano, salt, and black pepper with 1 cup of beef broth. Blend until smooth.

    Marinate the Beef

    Place the beef chuck roast in a large bowl or zip-top bag. Pour the marinade over the beef, ensuring it is well coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Beef

    In a large pot or Dutch oven, heat a little oil over medium-high heat. Remove the beef from the marinade and brown it on all sides. Add the remaining beef broth and bay leaves. Bring to a boil, then reduce heat to low and simmer for about 2-3 hours until the beef is tender.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and shred it with two forks. Set aside, and strain the broth if desired.

Assemble the Burritos

    Prepare the Fillings

    In a bowl, mix the cooked rice, black beans, and shredded beef together. Season with salt to taste.

    Warm the Tortillas

    Warm the tortillas in a skillet or microwave for easier handling.

    Fill the Burritos

    Take a tortilla and place a generous amount of the beef and rice mixture in the center. Add shredded cheese and a dollop of sour cream on top.

    Fold the Burritos

    Fold the sides of the tortilla over the filling, then roll from the bottom to secure the filling inside.

    Serve with Broth

    Serve the burritos in a bowl, ladling warm birria broth over the top. Garnish with fresh cilantro and chopped onion.
