Burrito Preparation

    Cook the Chorizo

    In a skillet over medium heat, add the olive oil. Once hot, add the chorizo sausage. Cook until browned and cooked through, about 5-7 minutes. Break it up into smaller pieces as it cooks.

    Scramble the Eggs

    In a bowl, crack the eggs and add salt and black pepper. Whisk together until well combined. Push the cooked chorizo to one side of the skillet and pour the eggs into the other side. Allow them to set for a minute, then gently scramble until fully cooked, about 2-3 minutes.

    Combine Ingredients

    Once the eggs are scrambled, mix them with the chorizo in the skillet. Stir in the black beans and cooked rice until everything is heated through, about 2-3 minutes.

    Prepare the Tortillas

    Warm the flour tortillas in a dry skillet or microwave until pliable.

    Assemble the Burritos

    Lay a warm tortilla flat on a plate. Spoon a generous amount of the chorizo and egg mixture in the center. Top with sour cream and shredded cheese. Fold in the sides of the tortilla and roll it up tightly from the bottom.

    Cut the burrito in half diagonally and serve immediately. Enjoy with extra sour cream or salsa if desired.
