Prep the Vegetables
Dice the onion, jalapeños, and tomatoes. Set aside.

Prepare the Beans
Open the can of black beans and rinse them under cold water. Set aside.

Warm the Rice
If using leftover rice, warm it in a microwave or on the stovetop until heated through.
Cooking

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and jalapeños. Sauté until the onion is translucent, about 5 minutes.

Heat the Beans
In a small saucepan, heat the rinsed black beans over medium heat until warmed through, about 5 minutes.

Warm the Tortillas
In another skillet, warm the blue corn tortillas over medium heat for about 30 seconds on each side until soft and pliable.
Plating

Serve the Dish
On each plate, serve a portion of the scrambled eggs with vegetables, a side of black beans, and a scoop of rice. Place two warm blue corn tortillas alongside. Enjoy!
