Method
For the Lamb Kabobs
Marinate the Lamb
In a large bowl, combine the cubed lamb, minced garlic, ground cumin, ground coriander, paprika, olive oil, salt, black pepper, chopped parsley, and lemon juice. Mix well to coat the lamb. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated lamb onto the skewers, leaving some space between each piece for even cooking.
Grill the Kabobs
Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness. Remove from the grill and let rest for a few minutes.
For the Egg Filling
For Assembly
Assemble the Pita
Take a warm pita bread and place a few pieces of grilled lamb kabobs and a portion of scrambled eggs inside. Drizzle with tzatziki sauce.
Serve
Wrap the pita around the filling and serve immediately. Enjoy your royal lamb kabob and eggs wrapped in warm pita!
