Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Peppers
Slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

Cook the Filling
In a large skillet over medium heat, sauté the diced onion and minced garlic until translucent, about 3-4 minutes.

Add the Beef
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.

Mix the Filling
Stir in the cooked rice, diced tomatoes, salt, black pepper, paprika, and Italian seasoning into the beef mixture. Cook for another 2-3 minutes until heated through.
Assembly and Baking

Stuff the Peppers
Spoon the beef and rice mixture into each prepared bell pepper, packing it in gently.

Top with Cheese
Sprinkle the shredded cheddar cheese on top of the stuffed peppers.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, until the peppers are tender and the cheese is melted.

Remove from the oven and let cool for a few minutes before serving. Enjoy your stuffed peppers!
