Method
Marinating the Chicken
Prepare the Marinade
In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
Grilling the Chicken
Preheat the Grill
Preheat your grill to medium-high heat, about 375°F (190°C).
Assembling the Salad
Prepare the Vegetables
While the chicken is grilling, wash and prepare the mixed greens, cherry tomatoes, cucumber, and red onion. Slice the cucumber and red onion thinly.
Combine Ingredients
In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix.
Add the Chicken
Slice the grilled chicken and place it on top of the salad mixture.
