    Prep the Ingredients

    Slice the onion and mushrooms. Mince the garlic. Set aside.

    Season the Chicken

    Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and paprika.

Cooking

    Sear the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs, skin-side down, and sear for about 5-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the sliced onions and mushrooms. Sauté for about 5 minutes until they become soft and translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.

    Deglaze and Simmer

    Pour in the chicken broth and stir to deglaze the skillet, scraping up any browned bits from the bottom. Return the chicken to the skillet, and sprinkle thyme over the top. Bring to a simmer.

    Add Cheese and Finish Cooking

    Cover the skillet and reduce the heat to low. Cook for about 20-25 minutes until the chicken is cooked through (internal temperature should reach 165°F). In the last 5 minutes of cooking, place a slice of Swiss cheese on each chicken thigh to melt.

    Garnish and Serve

    Once cooked, remove from heat and sprinkle with fresh parsley. Serve warm with your choice of sides.
