Method

Preparation

  1. 1

    Prepare the Ingredients

Gather all the ingredients: smoked sausage, eggs, frozen hashbrowns, bread, olive oil, salt, black pepper, and paprika.

  2. 2

    Cut the Sausage

Slice the smoked sausage into rounds, about 1/4 inch thick.

Cooking

  1. 3

    Cook the Hashbrowns

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the frozen hashbrowns and season with salt, black pepper, and paprika. Cook for about 5-7 minutes, flipping occasionally, until golden brown and crispy.

  2. 4

    Cook the Sausage

In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the sliced smoked sausage and sauté for about 5-6 minutes, or until browned and heated through.

  3. 5

    Cook the Eggs

In the same skillet as the sausage, crack the two eggs and cook them to your desired doneness (sunny-side-up, over-easy, or scrambled). Season with a pinch of salt and black pepper.

  4. 6

    Toast the Bread

While the eggs are cooking, toast the bread slices in a toaster or on a skillet until golden brown.

Serving

  1. 7

    Plate the Dish

On a plate, serve the crispy hashbrowns, topped with the sautéed smoked sausage, and place the cooked eggs on the side. Add the toasted bread to the plate. Serve hot.
