Salmon BLT

Sweet Potato Fries

Method

Salmon BLT

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy. Remove from the skillet and place on paper towels to drain excess grease.

  2. 2

    Prepare the Salmon

Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

  3. 3

    Cook the Salmon

In the same skillet with some leftover bacon grease or with olive oil, cook the salmon fillets over medium-high heat for about 4-5 minutes on each side or until cooked through and flaky.

  4. 4

    Toast the Bread

While the salmon is cooking, toast the whole grain bread slices until golden brown.

  5. 5

    Assemble the BLT

Spread mayonnaise on one side of each slice of toasted bread. On two slices, layer the cooked salmon, crispy bacon, Romaine lettuce, and slices of tomato. Top with the other slices of bread, mayonnaise side down.

Sweet Potato Fries

  1. 6

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 7

    Prepare the Sweet Potatoes

Peel the sweet potatoes and cut them into thin fry shapes.

  3. 8

    Season the Fries

In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, and salt until evenly coated.

  4. 9

    Bake the Fries

Spread the fries out in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until crispy and golden.
