Prepare the Onions
Slice the yellow onion into thin rings. In a skillet, melt 1 tablespoon of butter over medium heat. Add the onions, sprinkle with salt and pepper, and sauté until they are caramelized and golden brown, about 10-15 minutes. Stir occasionally to prevent burning.

Assemble the Sandwich
Lay out the slices of sourdough bread on a clean surface. On two slices, layer half of the roast beef evenly. Top with half of the sautéed onions and 2 ounces of cheddar cheese. Place the remaining roast beef and onions on top, then add a final layer of cheddar cheese. Top each with the remaining two slices of sourdough bread.

Grill the Sandwich
In the same skillet used for the onions, add the remaining tablespoon of butter over medium heat. Once melted, carefully place the sandwich in the skillet. Cook for about 4-5 minutes on one side until golden brown and the cheese starts to melt. Carefully flip the sandwich and cook for another 4-5 minutes on the other side until golden brown and the cheese is fully melted.

Serve
Remove the sandwich from the skillet and let it cool for a minute before slicing it in half. Serve warm and enjoy your delicious Roast Beef Melt!
