Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with non-stick spray.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

  3. 3

    Mix Wet Ingredients

In another bowl, mix the mashed bananas, blueberries, egg, milk, vegetable oil, and vanilla extract until smooth.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.

Cinnamon Crunch Topping

  1. 5

    Prepare Topping

In a small bowl, mix the brown sugar, all-purpose flour, ground cinnamon, and melted butter until crumbly.

Baking

  1. 6

    Fill Muffin Cups

Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the cinnamon crunch topping evenly over the batter.

  2. 7

    Bake

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  3. 8

    Cool and Serve

Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your blueberry banana cinnamon crunch muffins!
