Prepare French Toast

Mix the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

Dip the Bread
Preheat a non-stick skillet or griddle over medium heat. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

Place the soaked bread slices onto the skillet and cook until golden brown, about 3-4 minutes per side. Remove from heat and set aside.

Assemble the Sandwiches
Take one slice of French toast, layer with 2 slices of ham and 2 slices of Swiss cheese, and spread 1 tablespoon of mustard on top. Top with another slice of French toast to close the sandwich.
