Prepare the Beef
Preheat your oven to 325°F (165°C). Rub the beef roast with olive oil, then season it generously with salt, black pepper, garlic powder, and onion powder. Place it in a roasting pan.

Roast the Beef
Pour 2 cups of beef broth into the roasting pan. Cover the pan with aluminum foil and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15-20 minutes before slicing.

Make the Gravy
In a saucepan, add beef drippings over medium heat. Whisk in the flour to create a roux, cooking for 1-2 minutes until golden. Gradually whisk in 2 cups of beef broth and bring to a simmer. Cook until the gravy thickens, about 5-7 minutes. Season with salt and black pepper to taste.

Place a slice of thick bread on each plate. Top with sliced roast beef, a generous scoop of mashed potatoes, and drizzle with hot gravy.
