For the Roast Beef

    Prepare the Beef

    Preheat your oven to 325°F (165°C). Rub the beef roast with olive oil, then season it generously with salt, black pepper, garlic powder, and onion powder. Place it in a roasting pan.

    Roast the Beef

    Pour 2 cups of beef broth into the roasting pan. Cover the pan with aluminum foil and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15-20 minutes before slicing.

For the Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into even-sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt.

    Cook the Potatoes

    Bring the pot of water to a boil over medium-high heat. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes. Drain the potatoes well.

    Mash the Potatoes

    Return the drained potatoes to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

For the Gravy

    Make the Gravy

    In a saucepan, add beef drippings over medium heat. Whisk in the flour to create a roux, cooking for 1-2 minutes until golden. Gradually whisk in 2 cups of beef broth and bring to a simmer. Cook until the gravy thickens, about 5-7 minutes. Season with salt and black pepper to taste.

For Assembly

    Assemble the Dish

    Place a slice of thick bread on each plate. Top with sliced roast beef, a generous scoop of mashed potatoes, and drizzle with hot gravy.
