    Prepare the Vegetables

    Peel and dice the potatoes into small cubes, about 1/2 inch in size. Chop the onion and bell pepper into small pieces.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, black pepper, and paprika. Cook for about 10 minutes, stirring occasionally until the potatoes are tender and golden brown.

    Add the Vegetables

    Add the chopped onion and bell pepper to the skillet with the potatoes. Cook for another 5 minutes, stirring frequently until the vegetables are softened.

    Cook the Eggs

    In a separate small non-stick frying pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny-side up, over-easy, etc.), approximately 3-5 minutes.

Toast Preparation

    Toast the Bread

    While the eggs are cooking, toast the slices of bread to your preference. Spread butter on the hot toast.

    Once everything is cooked, serve the hash on a plate, top it with the cooked eggs, and serve with the buttered toast on the side.
