Salad Preparation

Cook the Salmon
Preheat a non-stick skillet over medium heat. Season the salmon fillets with salt and pepper. Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork. Remove from heat and let cool.

Prepare the Salad Ingredients
While the salmon is cooling, chop the cherry tomatoes in half, slice the red onion thinly, and chop the hard-boiled eggs into quarters. Slice the black olives and pepperoncini peppers as desired.

Combine Salad Ingredients
In a large salad bowl, combine the cooled salmon (flaked into pieces), chopped tomatoes, sliced red onion, black olives, pepperoncini peppers, feta cheese, and quartered eggs.

Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper until well combined.

Drizzle the dressing over the salad mixture and gently toss to combine all ingredients evenly.
