    Wash and Peel Potatoes

    Scrub the Russet potatoes under running water to remove any dirt. Optionally, peel the potatoes for a smoother texture.

    Cut Potatoes

    Using a sharp knife, slice the potatoes into even strips, about 1/4 inch thick, to ensure even cooking.

    Soak Potatoes

    Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This removes excess starch and helps achieve a crispier fry.

Cooking

    Heat Oil

    In a large deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Dry Potatoes

    After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture.

    Fry Potatoes (First Fry)

    Carefully add the dried potato strips in batches to the hot oil. Fry for about 5-6 minutes until they are soft but not browning. Remove and drain on paper towels.

    Fry Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Return the partially fried potatoes to the hot oil in batches and fry for an additional 2-3 minutes until golden and crispy. Drain on paper towels.

    While the fries are still hot, sprinkle with salt, paprika, and black pepper to taste. Toss to coat evenly.
