Method

Preparation of Steak

  1. 1

Begin by tenderizing the cube steak using a meat mallet, if not already tenderized. Season both sides with salt and pepper.

Breading Process

  1. 2

In a shallow dish, combine the flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

  2. 3

In another bowl, whisk together the eggs and milk until well combined.

  3. 4

Dip each piece of cube steak into the flour mixture, then the egg mixture, and finally back into the flour mixture, ensuring an even coating.

Frying the Steak

  1. 5

In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

  2. 6

Carefully place the breaded steak into the hot oil, being cautious not to overcrowd the skillet. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

  3. 7

Once cooked, transfer the steaks to a plate lined with paper towels to drain any excess oil.

Making the Gravy

  1. 8

In the same skillet, remove any excess oil, leaving about 2 tablespoons in the pan.

  2. 9

Add the butter and allow it to melt over medium heat. Sprinkle in the flour and whisk constantly until a roux forms, about 1-2 minutes.

  3. 10

Slowly pour in the milk, whisking continuously to prevent lumps from forming. Cook until the gravy thickens, about 5-7 minutes.

  4. 11

Season the gravy with salt and black pepper to taste.

Serving

  1. 12

Serve the fried steak hot, topped with the creamy gravy.
