Prepare the Apples

Cook the Apples
In a medium saucepan over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, lemon juice, and vanilla extract. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender and slightly caramelized.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to over-mix; a few lumps are okay.

Cook the Waffles
Preheat your waffle iron according to the manufacturer's instructions. Pour the batter into the preheated waffle iron, using about 1/2 cup of batter for each waffle. Cook until golden brown, about 5 minutes.

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form.
Assemble the Dish
