Quesadilla Preparation

Sauté the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced green bell pepper and onion. Season with salt and black pepper. Sauté until the vegetables are tender, about 5-7 minutes. Remove from the skillet and set aside.

Assemble the Quesadilla
In the same skillet, add another tablespoon of olive oil. Place one tortilla in the skillet. On one half of the tortilla, layer 1/2 cup of shredded chicken, 1/2 cup of sautéed vegetables, and 1/2 cup of shredded cheese. Fold the tortilla in half to cover the filling.

Cook the Quesadilla
Cook the quesadilla for about 3-4 minutes on one side until golden brown. Flip carefully and cook the other side for another 3-4 minutes until the cheese is melted and the tortilla is crispy.

Repeat
Repeat the assembly and cooking process for the remaining tortillas and fillings.

Cut and Serve
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with your choice of salsa or sour cream.

Fry the French Fries
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Carefully add the frozen French fries in batches and fry until they are golden brown and crispy, about 3-5 minutes.

Drain and Season
Remove the fries with a slotted spoon and drain on paper towels. While hot, season with salt to taste.
