Buttermilk Hot Cakes

    Prepare the Batter

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.

    Combine Wet Ingredients

    In a separate bowl, whisk the buttermilk, eggs, and vanilla extract together until smooth.

    Mix Ingredients

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

    Heat the Griddle

    Preheat a griddle or non-stick skillet over medium heat. Melt 1 tablespoon of butter in the skillet.

    Cook the Hot Cakes

    Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

    Repeat with the remaining batter, adding more butter to the skillet as needed.
